Chief Operating Officer Joe Margolis has spent the last 20 years operating the successful Margolis Bakery. Joe will be immersed in the day-to-day operations of the restaurant, including sourcing ingredients from the Long Island-based, Salt of the Earth food distributorship.

Organic Nation’s creative culinary genius is Executive Chef Maggie Paget. Paget spent over 10 years in the restaurant industry and was classically trained at the Le Cordon Bleu Program at the San Francisco, California Culinary Academy.

Dr. Amanda Fellows, the company’s Executive Director of Nutrition, completed her residency at NYU Medical Center in Manhattan, after earning her degree from Cornell University. Fellows is currently the Director of Nutrition at Nassau County Medical Center.

  Financials

Most important to Organic Nation is a positive imprint on the community. One percent of all profits will be invested back into local causes, including school food programs, playgrounds, walking trails and floral beautification projects.

Profits will be achieved by attaining a high level of volume in order to fully leverage economies of scale. The restaurant will utilize only quality, natural ingredients, but will control costs through economies of scale in the form of volume discounts. Menu prices will be fair, but affordable – good food should be priced accordingly – customers will get value for their dollar.

The market and financial analysis indicate that with a start-up expenditure of $300,000, Organic Nation can generate over $700,000 in sales by year one, $825,000 in sales by year two and produce a net profit of 10.5% on sales by the end of year two.

Future locations will have solar panels with installed to save on energy costs. Each location requires two cooks, one sous chef, two counter people and one drive-thru attendant.
